How to store bay leaves

Light, moisture and air: the storage conditions that protect the colour and aroma of the dried leaf.

21 SEPTEMBER 2026 3 MINUTES

Under the right conditions dried bay leaves keep their colour and aroma for a long time. The three main factors that reduce quality are light, moisture and air.

Away from light

Direct sunlight fades the green of the leaf and weakens its aroma. Storing the leaves in an opaque container or inside a cupboard is the simplest precaution.

A dry place

Dried leaves readily absorb moisture from the air. A leaf that takes on moisture softens, darkens and risks mould. Keep it away from sources of steam such as the hob and the dishwasher.

A closed container

Volatile compounds escape into the air over time. A tightly sealed glass jar or a zip-lock bag keeps the aroma for longer.

In short

  • Choose a cool, dry place away from sunlight.
  • Use a container that closes tightly.
  • Do not take leaves out with damp hands or a wet spoon.
  • For bulk purchases, keep sacks off the floor and away from walls in a ventilated store.
